A Delicious Flying Fish Sandwich

Bajan Fried Flying Fish Sandwich Recipe (using sardines)
Ingredients:
4 sardines, cleaned and deboned
1 cup all-purpose flour
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt and pepper to taste
1 egg, beaten
1 cup breadcrumbs
Vegetable oil for frying
4 buns or bread rolls
Lettuce, tomato, and onion slices for topping
Bajan hot Pepper sauce or your favorite hot sauce (optional)
Instructions:
1. In a shallow dish, mix together flour, garlic powder, onion powder, paprika, salt, and pepper.
2. Dip the sardines in the beaten egg, then coat with the flour mixture.
3. Heat vegetable oil in a frying pan over medium-high heat.
4. Coat the sardines in breadcrumbs and carefully place them in the hot oil. Fry for 2-3 minutes on each side until golden brown and crispy.
5. Remove the sardines from the pan and place them on a paper towel-lined plate to drain excess oil.
6. Toast the buns or bread rolls in the same pan until lightly golden.
7. Assemble the sandwich by placing a fried sardine on the bottom bun, topped with lettuce, tomato, and onion slices. Drizzle with Bajan hot sauce or your favorite hot sauce, if desired.
