Bajan Macaroni Pie

Bajan macaroni pie is a popular dish in Barbados, also known as “Bajan” cuisine. It is a baked pasta dish that is similar to a traditional macaroni and cheese, but with a unique Bajan twist.

Ingredients:

1 pound elbow macaroni

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups milk

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 onion, finely chopped

1 bell pepper, finely chopped

2 cloves garlic, minced

1 teaspoon thyme

1 teaspoon black pepper

1 teaspoon paprika

1 teaspoon hot sauce

Salt to taste

1 cup breadcrumbs

2 tablespoons butter, melted

 

Instructions:

1. Preheat your oven to 375°F (190°C).

2. Cook the macaroni according to package instructions until al dente. Drain and set aside.

3. In a large saucepan, melt 2 tablespoons of butter over medium heat. Add in the flour and stir until well combined.

4. Slowly pour in the milk, stirring constantly to prevent lumps from forming. Cook for 2-3 minutes until the mixture thickens.

5. Add in the cheddar and mozzarella cheese, stirring until melted and well combined.

6. In a separate pan, sauté the onion, bell pepper, and garlic until softened. Add in the thyme, black pepper, paprika, and hot sauce, and cook for an additional minute.

7. Combine the cooked macaroni, cheese sauce, and sautéed vegetables in a large bowl. Mix well until everything is evenly coated.

8. Season with salt to taste.

9. Transfer the macaroni mixture into a greased 9×13 inch baking dish.

10. In a small bowl, mix together the breadcrumbs and melted butter. Sprinkle this mixture over the top of the macaroni.

11. Bake for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.

12. Let it cool for a few minutes before serving. Enjoy your delicious Bajan macaroni pie!
